Southwest Jalapeño Bean Salad
I saw this on a YouTube short on the @emseats channel. She just calls it southwest bean salad, but it has jalapeños in it, so I added that to the title because I think it sounds more interesting.
It's pretty easy to make, nutritious, and delicious with tortilla chips. This is the best way I've found to eat vegetables!
Ingredients
- 15 ounce can black beans, rinsed
- 15 ounce can great northern beans, rinsed
- 1 cup diced red bell pepper
- 1 cup diced orange bell pepper
- 15 ounce can corn, drained
- 1 cup diced red onion
- 1 cup diced tomato
- 1/4 cup pickled jalapeños
- 1/4 cup chopped cilantro
- 1 diced avocado
- 1/4 cup feta cheese crumbles
Dressing
- 1/4 cup fresh lime juice
- 1 tsp cumin
- 1 tsp chili lime seasoning
- 1 tsp onion powder
- 1 tsp garlic powder
- 1 tsp lime pepper
- 1 tsp paprika
- 1 tsp salt
- 1 Tbsp honey
- 2 Tbsp extra virgin olive oil
Instructions
Mix ingredients for the dressing.
Add all the other ingredients to a large bowl.
Add dressing and mix well.
Notes
I use Mezzetta Sliced Tamed Jalapeño peppers (medium heat). These are actually a hybrid of jalapeño peppers and bell peppers. They are pretty mild, especially mixed in with all the other ingredients.
